GST rate editable in quotations, proforma invoices and tax invoices.
I have selected the option of disallowing editing of GST Rate on sales records from admin module but GST rate is still editable in quotations, proforma invoices and tax invoices. I even tried to logout and login again but that does not help.

Locking of edit function on GST rates in sales and purchase records works fine. It is allowing you to edit GST rates in quotations, proforma invoices and tax invoices on item level because you have super-admin access. Any user with super admin access will be able to edit GST rates in any record. For all other users editing of GST rate on item level will be blocked in all sales records if "Disallow editing of tax rates in sales instruments" is selected and editing of GST rate on item level will be locked for all purchase records if "Disallow editing of tax rates in purchase instruments" is selected .
